MoT’s Homemade Lemon Squash

A refreshing drink with many variants. Served at our cooking school, this is always a winner.

MoT’s Homemade Lemon Squash

ingredients for 1.5 litres concentrate

3 x medium lemons
900gm caster sugar
25gm citric acid
1 Ltr boiling water

method

  1. Juice lemons to yield about 250ml.
  2. Finely grate zest to yield 2 teaspoons.
  3. Place juice, rind, caster sugar and citric acid into a large bowl.
  4. Pour over boiling water and stir until all sugar dissolves.
  5. Cool to room temperature.
  6. Pour cordial concentrate into warm sterilized bottles.
  7. Store in the fridge for up to 4 months.
  8. Dilute to taste with water and/or soda water.

cooks notes:

  • Keep refrigerated once made for up to 6 months.
  • Ensure bottles have been sterilized well before pouring in cordial.
  • Dilute concentrate with ginger ale and mint for a wonderful flavour or try rose water and rose petals when serving for an exotic Middle Eastern version.
