Technique Workshop

A ‘must do’ class in our repertoire, this workshop comes highly recommended.

Knife skills are critical in an efficient kitchen and assist in making cooking a real pleasure. You get to practice chopping and slicing as you are taken through methods taught to trainee chefs around the world. This is the first step in becoming a truly great cook.

We’ll assist you to achieve skills that, with practice, will speed up food preparation in your kitchen. You get to chop, dice, slice and eat and we’ll clean up!

During this class

  • You’ll learn which knives to use for what job
  • How to keep knives sharp
  • We’ll give you buying tips, what to look for and what to avoid
  • Receive a Knife Notes and French Cuts Sheet for reference at any time
  • You’ll get as much hands on experience and guidance as you want
  • The Chef’s Knife is our main focus in this class. Learn how to grip and manipulate this knife to make food preparation easy.

    • Kaffir Lime Leaf Steamed Fragrant Rice

Knife Sharpening Service

When Essential Knife Skills is scheduled on a Saturday morning, AMS Sharpening will be outside the school.

Tony can expertly sharpen your knives from $5.50 per knife. Anyone welcome, bookings not necessary.

NOTE: If you plan on bringing your knives, please check with us Tony is here just in case of illness or extreme weather (he works in a little blue van so if  mid-summer heat is overwhelmingly high, he will not be here)
