There's a shortage of humble Cottage Cheese on the shelves at the moment - so what's going on?
TikTok and #protein are to blame! Cottage cheese is touted to be low fat and high has a protein content, which are two desirable properties for today's conscious eater! Also doing the 'social' rounds is a great little recipe idea for roasted sweet potato with savoury Mexican spiced minced beef, avocado, cottage cheese and all topped off with some hot honey (chilli hot), or hot sauce (Urban Foragers new Chilli Jam would be perfect). It's a great combo... no wonder cottage cheese is getting its' time in the spotlight again.
Let me tell you a secret - cottage cheese is super-easy to make yourself, and it only has 2 ingredients.
The current cottage cheese shortage is so important, it's even newsworthy! Channel 7 News team were in my kitchen on Friday filming me making fresh cottage cheese, so now everyone can enjoy cottage cheese even when it's out-of-stock in the supermarkets!
Cottage Cheese
Makes about 500gm
Ingredients
1L milk
30-40ml white wine vinegar
60-80ml pouring cream or milk
Method
- Heat milk on stove to boiling point (90°C)
- Stir and add vinegar
- Within a few seconds, curds will separate from whey
- Set aside for 30 minutes to allow curds to ‘knit’ and cheese to cool
- Drain curds using slotted spoon and place in bowl
- Add cream/milk and gently stir
- Cover and refrigerate up to 5 days
