Universal No-Cook Satay Sauce

 

 

This is a useful Satay sauce that in its' simplest form, can be made in a peanut butter jar when it's close to being empty. Just add the remainder of the ingredients and shake! 

For this recipe, I made the sauce in a bowl, then kept leftovers in a jar. 😉 It will keep in the fridge for about 10 days at least.

Try this sweet-sour-hot-salty sauce, cold or hot, with a stir-fry as per video, on a cold noodle dishes, an accompaniment to Indonesian Gado Gado salad, with beef or chicken skewers, or as a dip for Asian style finger foods.

INGREDIENTS

80gm peanut butter
2Tbsp light soy sauce (salty)
1½Tbsp rice vinegar (sour)
1Tbsp lime juice (sour)
2Tbsp maple syrup (sweet)
3tsp grated fresh ginger (hot)
3tsp Krunchilli or other hot sauce (hot)
2Tbsp water

METHOD

  1. Place peanut butter in deep mixing bow.
  2. Add soy sauce and stir with flat whisk to combine and loosen the peanut butter.
  3. Add remaining ingredients and mix well. 

COOKS NOTES

  • Australian standard measurements - 1Tbsp is 20ml and 1 cup is 250ml.
  • Aim for a balance of hot, sweet, sour, salty in this sauce and adjust to your liking.
  • Use smooth or crunchy peanut butter. We love Nuttabutta made fresh from Aussie grown peanuts here in Perth for our Providore customers. 80gm can be measured in ⅓ cup.
  • Light soy sauce - instead use Tamari Sauce.
  • Rice vinegar - instead use the slightly sharper white wine vinegar, sherry vinegar or apple cider vinegar.
  • Lime juice - instead use lemon juice giving a slightly different flavour profile.
  • Maple Syrup - instead use 1½Tbsp soft light brown sugar.
  • Fresh ginger - use pre-minced from a jar or omit.
  • Krunchilli is our favourite hot condiment, made in Dunsborough WA. Instead use Sriracha or other chilli sauce.
  • If using sauce with a noodle stir fry, add once cooked. The sauce needs no cooking and if added too soon, the noodles will soak it all up. If the dish looks a bit dry, boil the kettle and loosen it with a couple of tablespoons of hot water stirred through.
