Keep it simple with Strawberries and Cream. Let me show you how to make the most luscious Chantilly Cream to give the dollop-on-top a touch of pizazz.
At this time of year the strawberries we sell come from Smashastrawb farm in Manjimup owned by Paul De Silva. Anthony picks them up from the transport depot coolroom in Canning Vale on Thursdays and Fridays fresh from Phil, Paul's son. We then deliver them to customers - they receive them sometimes within 24 hours of picking!
INGREDIENTS FOR FOUR
500gm Smashastrawb strawberries
200ml chilled whipping cream
100ml chilled sour cream
2-3Tbsp icing sugar
½ tsp vanilla paste
METHOD
Rinse strawberries and dry on absorbent paper. Remove green hulls and cut berries in half if large.Whisk all cream ingredients together until cream holds its shape.
Serve strawberries at room temperature with a dollop of chilled cream.
