This roast has it all! Tender, flavoursome, W.A. free-range pork, with butcher-scored skin to make the best crackle.

To make really good crackling, leave roast uncovered overnight to allow skin to dry out. When ready to cook, rub with a little oil and scatter generously with salt. Roast in pre-heated 220C oven for 30 minutes then turn heat down to complete cooking. calculate 20 minutes per 500gm and 20 minutes extra. Cover and rest meat for 15 minutes, before carving.

So good. Just don't fight over it, there will be plenty to share around.
