Wash before using to remove any grit. Use leaves and stalks.
If looking a bit droopy, immerse in sink of cold water for an hour. Shake and place in air tight container with a couple of sheets of absorbent kitchen paper in the bottom. Refrigerate for a few hours to perk up.
Can be chopped and stir fried or halved lengthways, steamed and drizzled with Oyster sauce on serving.
