Simply stir-fry with chickpeas and vegetables for an aromatic side dish. Use as a marinade with all your favourite ingredients to fry or bake. No bland flavours here and it’s better than take out!

TRACEY'S FRESH MADE SIMPLE TIPS:

  • I'd suggest using diced fresh salmon or chicken breast to make a Yellow Thai Salmon Curry.
  • For 4 people, half jar of curry paste is sufficient. Pop the other half straight in the freezer in the jar for another time.
  • No need to add water as suggested in the Turban Chopsticks recipe online (simmer the sauce as opposed to boiling then 400ml coconut milk will be sufficient volume of sauce for the curry).
  • I recommend Chef's Choice coconut milk and Yellow Bean Soy or Squid Brand Fish Sauce. All available at Asian supermarkets.
  • Make curry sauce, adding any chopped root vegetables to the paste as frying.
  • Once sauce is simmering add any greens, brassicas or other quick cooking veg along with cubed fresh salmon. Simmer for 4 to 5 minutes.
  • The addition of fish sauce or soy sauce is essential as per the recipe on the website. 
  • Try to get a good balance of sweet (light palm sugar/soft brown sugar), salty (fish sauce/soy sauce), sour (lime juice) which can be tweaked once curry is cooked, just before serving.

  • Create a raita with a tablespoon of paste and yoghurt and fresh cucumbers.
