An ancient grain, freekeh is made from young, green wheat that is traditionally roasted over wood fires to burn off the husks, giving the grain a lovely, nutty flavour.
Freekeh’s originates from the Arabic word ‘faraka’ (meaning ‘to rub’) which refers to the traditional method of rubbing the husk away from the dried wheat. It is then left to dry further and either cracked or left whole (i.e. wholegrain).
Freekeh is a wonderful alternative to rice or couscous. Use it warm served with a long slow cooked meat dish spooned over it, or cold as a salad with raw veggies, or warm with roasted vegetables. Add nuts and seeds for even more goodness.
High in fibre and protein. Low in carbohydrates.

TO COOK
RAPID BOIL - Bring saucepan of water to a rolling boil, add salt so water tastes pleasantly salty. Add freekeh and cook for 20-25 minutes, until tender. Drain well.
ABSORBTION - Bring 375ml water with a good pinch salt to the boil, in covered saucepan. Add 250gm/1 cup freekeh to pan, stir. Replace lid and bring back to a simmer for 20-25 minutes, until all water has been absorbed. Serve.
