A soft lettuce to give textural variance in a salad. Use in sandwiches and in buns with other salad veggies and burgers.

TIP: Dress salads containing festival lettuce with vinaigrette as opposed to mayonnaise, or thin out the mayo with a splash of warm water mixed through; straight mayo is too heavy for these delicate leaves.

If lettuce is looking a bit limp, gently remove leaves and soak in a sink of cold water for an hour or so to perk up. Spin dry in a salad spinner or a clean tea towel and store in air tight container in fridge.
