'Bakers Cinnamon' is also sometimes referred to as Dutch Cinnamon. It is a variety of cinnamon (Cinnamomum cassia) but the harvested bark differs from cinnamon as it comes off in a piece a couple of millimetres thick. Cinnamon bark is paper thin and from these pieces 'quills' are rolled making it a more time consuming product. Cassia is highly aromatic and has a sweeter smell than cinnamon. It's fantastic in baked goods (cakes, muffins, tarts and biscuits) and turmeric latte.
