Verjuice or Verjus is made from unripe and unfermented grape juice, that is then chilled and filtered so that it doesn't ferment, so contains NO alcohol.

It is both softer than citrus juice and milder than vinegar. When used in cooking, its taste and texture produce a lovely balance between sweet fruit flavours and a drying, zingy acidity.

USES

One of my favourite ways to use Verjuice is to make a delicious, healthy and refreshing drink. Dilute verjuice 1:3 with sparking mineral water, add a few drops of Angostura Bitters and add ice. Simple but so nice to sit down with at the end of a busy day.

Deglaze pans to make sauces, include in dressings and marinades, as well as being sweet enough to add to poached fruits whilst cooking.

Use in place of wine in any recipe. Dish may need an extra pinch of salt to balance out the natural sweet/sour flavours of the grape juice.

Store in pantry, when open keep refrigerated.
