Dubai Chocolate Shortbread Biscuits (with pistachio!)

If you have a piping bag and wide star shaped nozzle, these are fun to make. If not, simply roll dough into balls and make as per the thumbprint cookie method.

A riff on London baker Nicola Lamb's excellent Baci-esque Chocolate Shortbread Biscuits. Replacing the hazelnuts in the dough with the less intensely flavoured almond meal and the chocolate ganache with a pistachio katafi pastry Dubai chocolate number. Pretty as a picture.
